The only caveat is the portion size--I kind of do my own thing there, a half cup of veggies isn't going to cut it for this sprinting mama. So get your antioxidants on and make like a movie star--below is a favorite of mine, or find your own here:
Grilled Chicken with Mango and Scallion (1 serving)
1 6-ounce boneless chicken breast
2 tsp sherry wine vinegar
2 tsp honey
1 tsp chopped cilantro
Fresh cracked pepper
1/2 mango, peeled and sliced
1 tablespoon sliced scallions
1/4 tomato, diced
Grill the chicken for 3 minutes on each side over medium heat. Remove from the heat. (A meat thermometer inserted in the breast should read 165 degrees.) Make a dressing by whisking together a teaspoon of water with the vinegar, honey, cilantro and pepper.
Cut the chicken into strips and toss well with the mango, scallions, tomato and dressing.
