Recipes for Success

Make mine Chanel--er, I mean sherbet.
After a couple of weeks of traveling the bumpy skies (think lightening storms and flight delays) with the boys, then indulging in on-the-go fare with their grandparents, (Cracker Barrel! Ice Cream!) capped off finally by a family brunch at the Four Seasons, I am ready to re-boot mealtime.

Whitaker recently reminded me I have Tracy Anderson's 30-Day Method tucked away in my kitchen cupboard. The front half of the book is filled with all the great balletic/pilates/cardio moves Tracy and Gwyneth have made famous (Gwyn's goal was to change her oblong booty into something more perky)...

Mission Accomplished.

The back section is filled with fabulous clean, healthy recipes--you can tell Tracy worked hard with some good people to offer easy to make options filled with lots of different vegetables and proteins. There's even a sort of chocolate concoction for the dessert-lovers out there. It's surprisingly yummy but packed with so many blueberries, the choco-guilt gets lost in the food processor.

The only caveat is the portion size--I kind of do my own thing there, a half cup of veggies isn't going to cut it for this sprinting mama. So get your antioxidants on and make like a movie star--below is a favorite of mine, or find your own here:

Grilled Chicken with Mango and Scallion (1 serving)
1 6-ounce boneless chicken breast
2 tsp sherry wine vinegar
2 tsp honey
1 tsp chopped cilantro
Fresh cracked pepper
1/2 mango, peeled and sliced
1 tablespoon sliced scallions
1/4 tomato, diced

Grill the chicken for 3 minutes on each side over medium heat. Remove from the heat. (A meat thermometer inserted in the breast should read 165 degrees.) Make a dressing by whisking together a teaspoon of water with the vinegar, honey, cilantro and pepper.

Cut the chicken into strips and toss well with the mango, scallions, tomato and dressing.
